This ensures that your water is kept at a constant temperature (to within 0.5°C), and this temperature won't fluctuate, even if other outlets in the house are being used. This not only removes the constant fiddling with the dials trying to find the right temperature, but it also makes thermostatic shower valves incredibly safe.
